Broken head cover bolt

I was putting the head cover back on my bike and I accidentally overtorqued one of the bolts and snapped it in half. It is the one on the rear right side of the head cover, to the right of the valve inspection cover. I then tried to use an ez out, which broke off deep into the bolt. I was thinking since the place directly under the bolt is accessible from outside the engine (in the recess to the right of the carb) I could drill the hole all the way through and put a nut on the bottom of it. Would this work, or should I attempt to rethread the hole? The ez out is making it really difficult to drill. I would appreciate any suggestions.
